Carnivore #14 : The Party Cake

The Party Cake.

The 3 Ingredients.

Eggs / 4.

 Cream Cheese / 100 gm

Whipping cream / small carton 200 ml.

The 3 Steps.

1. The Eggs.

2. The Cream Cheese.

3. The Mix and Bake.

Step 1 : The Eggs.

Separate

 the yolks from whites.

Cup the yolk

and let the white

 slip through the fingers

into the transfer bowl.

Transfer

the egg white

into the

first mixing bowl

 and the yolk,

into the second.

Repeat the same way

for the next 3 eggs.

This method,

using 3 bowls,

helps to ensure

the whites are all

clean and pure

and

should

it

be

contaminated

by any accidental

drop of yolk,

it would be easier

to rectify.

The whites must be

uncontaminated

by any yolk invasion.

That's the cardinal rule.

Whisk the whites ...

till stiff.

Leave it aside for a bit.

#2 : The Cream Cheese.

Cut 100 gm

 of cream cheese.

The measurement

is on the

cheese packaging.

4 yolks + 100 gm cream cheese.

Mix the yolks and cheese.

#3. The Mix and Beat.

Blend the mixture

till smooth.

Transfer the stiff whites ...

into the smooth yellow mixture.

Gently fold.

Keep folding ...

till they look combined.

Roughly.

This is after 10 folds.

Bryan says to stop

folding already.

I'm using a springform pan.

Release the latch

and place a baking sheet

over the base.

Return the ring

to its position and

 fasten the latch.

Grease the sides of the pan.

Transfer the batter

 to the pan.

All good to go.

Oven 150c @ 30 mins.

No pre-heat.

Tick tock,  tick tock.

At 30 minutes.

Perfect.

So ...

This makes one layer

of the cake.

Repeat the whole process

from Step 1 to 3

for the second layer.

This is why

 Carnivore baking is so

therapeutic.

About an hour later.

Layer number two is here.

Leave the newcomer

to cool completely.

The 2 layers.

Like 2 large

Communion Hosts.

Beautiful.

Beat some whipping cream

for the topping.

Whisk till it's stiff and

able to hold its shape.

Spread the whipped topping ...

with a spatula ...

all over layer number one.

Stack up.

Place the second layer

over the first.

Cover up with the whipped topping.

Optional.

Blueberries.

This cake is for my nephew

who is celebrating his ...

1st Holy Communion.

I am adding the berries

 for him.

The white base resembles

the Communion wafer

and the berries,

arranged in a circle

is meant to symbolize

unity and eternity.

A ring that has no end.

None of which

explanation

my 9 year old nephew

will understand,

 I dont think.

Call for Plan B.

We shall give this pretty cake

a fun and happy name.

Look.

I couldn't possibly tell

my nephew

I made a

Carnivore

3-ingredient

cake

 for his big day.

He might burst into tears.

I asked AI for help,

and received immediate

suggestions.

AI is my new friend,

by the way.

Unfortunately,

the list of names suggested by

my robot friend sounded

a

tad

 too

 holy.

Besides,

Bryan did not approve

any of them and said,

"Just call it

 3-ingredients."

What?!

Not much help there.

Long pause here.

Big dilemma.

Frown.

Pace about.

Tap fingers restlessly

on the coffee table.

All of a sudden.

EUREKA!!!

THE PARTY CAKE

It is a celebration.

It is a PARTY.

Everyone knows

what a party is.

Great.

Decision made.

We shall call it The Party Cake.

It's the perfect name.

Everybody loves a party.

Birthday parties.

Christmas parties.

New Year parties.

1st Holy Communion parties.

My nephew will be excited.

God will be - pleased.

Fingers crossed.

If Jesus is not on board,

Mother Mary will surely

have a word with her Son -

privately.

"We

 can't

 always

 have

 wine ..."

And so,

the Party Cake it is.

Here's my slice.

Light.

Yummy.

Delicious.

Drizzle with honey.

For family members.

We all enjoyed the Party Cake.

I'm so glad we made it.

More importantly,

we gave it a

fun and happy name.

That is the atmosphere

of the day.

And every day.

Fun and Happy.
