DiSH 194 : FISH PAELLA


 FISH PAELLA




ASH WEDNESDAY, MARCH 9


Bryan prepared dinner this evening.


Justine was knocked out after a whole day at the driving test camp (she passed, by the way!) and I was with Hayley at Starbucks, Bangsar till late in the evening. :D


 Ingredients for Stock.

onion, garlic, ginger, tomatoes, dried chillies, 
cinnamon stick and herbs (rosemary and thyme).

 1. Prepare Stock.


Saute onion, garlic and ginger in olive oil.
Add herbs, dried bay leaves and cinnamon stick.
Add tomatoes and dried chillies.
Add a table spoon (heaped) of tomato paste.

Add seasalt to taste.
Add 3 small cups of filtered water.
(for 3 cups of rice grains)

Half - close lid and boil at medium flame.
 When the broth is done, strain and leave aside for the rice.

 Ozonize the Fish Fillet to remove chemicals and bacteria.

 Ozonize the Vegetables to remove pesticides ...


I was surprised to notice that the bell peppers were still fresh and crisp. I had bought them more than a week ago, and had ozonized them before using a portion, and keeping the other portion. 

The vegetables do last longer after ozonizing.
 
 The ingredients for the rice.

2. Prepare the Fish.


Season fish pieces with dark shoyu, seasalt, 
pepper and arrowroot powder.


To Fry : Saute onions and garlic. 
Add shitake mushroom stalks (sliced).
Add a bit of water of dry. 
Add fish pieces.  Add seasalt. Add shoyu.
Fry till done. Leave aside.

3. Prepare the Rice.

Using the same frying pan, add the 1st cup of the stock. 
Flame is on medium heat.
Add the rice grains. Add tomatoes. 
Keep turning the spatula around so the rice won't stick. 

Add the 2nd cup of stock. Arrange mushroom slices.
Allow to cook for a few minutes.

Scatter the fried fish over the top. 
Decorate with bell peppers and lemon slices.
Add the 3rd cup of stock to nicely cover the contents.


Close lid and allow the rice to slowly cook 
for about 15 minutes or so. 


Remove lid and continue to cook until
liquid evaporates and rice is done.

Garnish as desired. 

Serve straight from the pan. :D

Oooohhh ... Yummy - delicious!

The rice is extremely flavorful and 
the fish is fresh and tasty to the bite.
