Day 145 : Macaroni Cheese Lasagne

 MACARONI CHEESE LASAGNE


This evening, I'm gonna make a simple lasagne. 

We had a heavy late lunch at a Malay restaurant this afternoon, that serves Kelantanese food, and we are so stuffed! :D So, I'm just gonna make a small lasagne dish with whatever vegetables I have in the fridge, for dinner. 

Justine says to make sure I add cheese. :D Never mind that we're stuffed and full. Cheese, we gotta have!


3 Simple Steps :


1. Chop the Vegetables.

2. Boil the Pasta.

3. Fill up the Dish.

 1. Chop the Vegetables.
Tomatoes, green peppers, white mushrooms, 
red peppers, carrots, zucchini and onions. 

 2. Boil the Pasta.
Boil some macaroni in salted water. 
Drain and toss with a little bit of butter.
Spread on a casserole dish.
 
Normally, I would layer slices of potatoes right at the bottom of the dish for a more filling meal, and the macaroni would go above it. I am skipping the potatoes for this dish as we are still quite full from lunch this afternoon.

 3. Fill up the Dish.
Beat 3 eggs and season with seasalt and pepper.


I would have liked to use 5 eggs, but I only had 3 in the fridge. 
So, I'm just gonna use 3. Let's not sweat over the small stuff, yah?

 Pour fresh milk over until it covers the pasta.

Ideally, this is the part where I add bechamel sauce, which is basically just white sauce made of thickened milk with butter and flour. For this dish, I'm not gonna. I think I've established why. :D

 Scatter chopped onions, tomatoes ...

... zucchini, carrots, green and red bells peppers 
and mushrooms. Shake some black pepper and 
squeeze lime juice over the top.

No, I didn't have lemons. Only lime.
Who's gonna know ...

 Place cheddar cheese over the top.

Yeah, I only have those sandwich cheese. Shredded Mozarella cheese would 
have been a better choice. Next time, we'll use the correct cheese.

 My mother gave us some sweet dried meat the day before.
Cut them up into slices and scatter over the top. 

Cover the dish aluminium foil and 
pop it into the mini-oven.

Set the temperature at 180 degrees celcius
and allow to bake for about 20 minutes.

Remove the foil and bake for another 
10 minutes or so just to brown the top a bit.


I suppose the equivalent to the sweet meat would be what - crispy bacon?

How easy is this dish? Absolutely Kindergarten! :D

We divided the lasagne into 4 portions. Bryan is having his over a bed of greens. That photo is somewhat blur so I'm omitting it. Sorry about that. Justine and I are having our lasagne without the salad.

The sweet meat does give the lasagne 
an interesting twist.
