We had some leftovers of the broth that we prepared for dinner the night before. Bryan made a little bit more stock than we needed. So, we're gonna use that to prepare a simple pasta dish this evening.



 1a. Ozonize the Vegetables.

To remove pesticides and unwanted contamination. 

Incidentally, the bubbling of water will also help to dislodge dirt particles from impossible to reach places whilst washing vegetables.



 Ib. Ozonize the Ham. 

Surprisingly, the ham does not produce much 
of the rubbery substance. Only a little as shown above.

 See how fresh and clean the ingredients are 
after ozonizing?

 Prepare the onions, garlic and chilli padi ...


While ozonizing the above ingredients,
prepare the pasta noodles.



 2. Boil the Pasta.
When the pasta is about ready, toss broccoli in and 
blanch for a minute or two. Drain and leave aside.

3. Prepare the Sauce.


Saute onions and garlic in olive oil until fragrant.

Add chopped bird's eye chilly.

Add chopped ham.

Fry Fry Fry.

 Add tomatoes. Add one heaped tablespoon of tomato paste.
Squeeze some lemon juice over.

 Add the leftover broth.

 Toss the spaghetti noodles in and mix well.
Serve immediately.

DiSH 194 : FISH PAELLA


 FISH PAELLA




ASH WEDNESDAY, MARCH 9


Bryan prepared dinner this evening.


Justine was knocked out after a whole day at the driving test camp (she passed, by the way!) and I was with Hayley at Starbucks, Bangsar till late in the evening. :D


 Ingredients for Stock.

onion, garlic, ginger, tomatoes, dried chillies, 
cinnamon stick and herbs (rosemary and thyme).

 1. Prepare Stock.


Saute onion, garlic and ginger in olive oil.
Add herbs, dried bay leaves and cinnamon stick.
Add tomatoes and dried chillies.
Add a table spoon (heaped) of tomato paste.

Add seasalt to taste.
Add 3 small cups of filtered water.
(for 3 cups of rice grains)

Half - close lid and boil at medium flame.
 When the broth is done, strain and leave aside for the rice.

 Ozonize the Fish Fillet to remove chemicals and bacteria.

 See the yucky rubbery substance that emerges ...

 Ozonize the Vegetables to remove pesticides ...


I was surprised to notice that the bell peppers were still fresh and crisp. I had bought them more than a week ago, and had ozonized them before using a portion, and keeping the other portion. 

The vegetables do last longer after ozonizing.
 
 The ingredients for the rice.

2. Prepare the Fish.


Season fish pieces with dark shoyu, seasalt, 
pepper and arrowroot powder.


To Fry : Saute onions and garlic. 
Add shitake mushroom stalks (sliced).
Add a bit of water of dry. 
Add fish pieces.  Add seasalt. Add shoyu.
Fry till done. Leave aside.

3. Prepare the Rice.

Using the same frying pan, add the 1st cup of the stock. 
Flame is on medium heat.
Add the rice grains. Add tomatoes. 
Keep turning the spatula around so the rice won't stick. 

Add the 2nd cup of stock. Arrange mushroom slices.
Allow to cook for a few minutes.

Scatter the fried fish over the top. 
Decorate with bell peppers and lemon slices.
Add the 3rd cup of stock to nicely cover the contents.


Close lid and allow the rice to slowly cook 
for about 15 minutes or so. 


Remove lid and continue to cook until
liquid evaporates and rice is done.

Garnish as desired. 

Serve straight from the pan. :D

Oooohhh ... Yummy - delicious!

The rice is extremely flavorful and 
the fish is fresh and tasty to the bite.

MUSHROOM RICE with DORY FISH
PRESSURE COOKER

Justine is helping me in the kitchen this evening. It's been a while since we last photographed our cooking session. My camera was on a vacation. :D

We are gonna use the pressure cooker to prepare a simple dinner with mushrooms and fish... and stir-fry a vegetable dish. Let me check what vegetables we have in the fridge. 


(allow some time for checking)


Ahh ... what have we here???

Cabbage. :D

 1a. Ozonize the Fish.

Dump in the other accompanying ingredients as well:
onion, garlic, ginger, dried cillies.

 See the eeeeecky stuff that emerge?
That's not foam, mind you.
It's a rubber-y subtance that was about to be 
deposited in our bodies.Yikes!

Ib. Ozonize the Vegetables.

Cabbage, carrot, tomato, shitake mushrooms, 
coriander leaves.

 Oooh, the fish smells clean and fresh after 
a uhh, bubble bath ... :D

 2. Saute Ingredients.

Saute onions, garlic and ginger in dark sesame seed oil.

Add cumin. Add dried chilles.

Fry Fry Fry.


By the way, Justine is frying while I toss the ingredients in. :D

 Add pre-washed rice grains. 

Add half a cube of NO-MSG mushroom stock.

Add a circle-dash shoyu. Add a shake of pepper.

Fry Fry Fry ... on low flame.

 Add mushroom. Add water.

Close lid of Pressure Cooker. Turn the flame up.
  Let it hissssss for a minute, before turning off the flame 
and allowing it to transform the contents in the pot.


The Pressure Cooker is a magic pot, you know ...

 3. Prepare the Fish.


Season with lemon juice.
I didn't add salt here. Trying to cut down ... you know, 
be healthy and all ... I think just for today ... :D

 Saute onions, garlic and ginger with dark sesame seed oil.

Add the fish pieces in. Add chopped coriander leaves.

Fry fry Fry.

 Add dark shoyu. Add light shoyu. Add a bit of water.

I ran out of brown rice vinegar so, I added some 
Lingam's Chilly Sauce for a bit of kick.
 Fry Fry Fry ... until done.
Transfer to a bowl and leave aside.

 I didn't wash the pan after frying the fish. 

Heat up sesame seed oil.
Saute onions and garlic. 
Add a pinch of tumeric powder. 
Add cabbage and carrots.
Add seasalt. Add a small cup of water.
Simmer until done.

 Yayyy ... The rice is ready!

Bryan said he could smell the fragrant 
rice all the way from the lift of our condo.
That's about 20 steps away. 

Told You the PC is magical ... :D

Add the fish in and fluff up the contents. 

Hmmm - Mmmm ...

 The rice is absolutely delicious and tasty. :D

The mushrooms tasted a bit bland. Next time, I would stir-fry the mushrooms 
with the fish, and add them on when the rice is ready. :D

DiSH 192 : SAMBAL PETAI with IKAN BILIS

Sambal Petai with Ikan Bilis

1. Ozonize the vegetables

to get rid of any contamination by bacteria, fungus, mold and  the artificial stuff like pesticides. Just 10 minutes with the Ozonizer and you get pesticide-free vegetables

The "bubbling" by the machine also helps to dislodge dirt as you will see at the bottom of the bowl after the treatment. :D

2. Prepare the Ingredients.

Petai, of course! All nicely split into two to ensure there are no "extra" proteins - worms! Yikes!

Lots of chillis, shallots, garlic, ginger and lime.

2a. Blend ...

Blend the chillis, ginger, shallots (leave half of the shallots for sauteing) together and squeeze in the lime juice.

2b. Fry Petai & Ikan Bilis. 

Lightly fry the petai in sesame seed oil. Add a pinch of salt to sear in the natural flavors. When you think it's ready, fry just a little bit more. :D (An alternative is to dry-fry without oil and without salt)

Transfer to a plate and leave aside. 

Next, fry the ikan bilis in the same oil. Season with thick soy sauce and a little brown sugar to make the ikan bilis "crunchy." Leave aside.

3. Saute the blended ingredients.

Saute shallots and add the blended ingredients to a sizzle. Simmer on low fire until the oil surfaces and is reduced to a light paste consistency, occasionally stirring the contents in the pan. 

Add in the petai and ikan bilis ... and it's done

Crunchy, hot, sweet, sour ... and yummy-nice! 

An explosion of flavours in your mouth!

Garnish with a slice of lime and 
a sprig of coriander leaves. 
Serve immediately with steamed rice.
