PRESSURE COOKER CHICKEN RICE
WITH FILLET
I was out with a girl-friend today.
By the time I got home with Justine, there was a wonderful chicken rice aroma that filled the home. Bryan had prepared chicken rice in the pressure cooker before he went for an appointment. :D Ooh, dinner tonight would be fantastic. Here's how Bryan made his famous chicken rice. This time, using chicken fillet.
1. Chicken Rice
Saute shallots, garlic and ginger
in sesame seed oil in the pressure cooker.
Add half a cube of no-msg chicken stock.
Add the rice grains. Fry till fragrant.
Add filtered water for cooking rice.
2. Chicken Fillet
Slice the chicken fillet into bite sizes.
Season with seasalt, pepper and sesame seed oil.
Add shoyu, organic oyster sauce and arrowroot powder.
Mix to marinate.
Transfer to a flat dish.
Place dish on a metal stand over the rice.
Cover the lid.
Turn on flame till sizzling sound is heard.
Turn off. Allow to cook on its own.
3. Sauce and Gravy
i. Chilly Sauce
Blend chillies (deseeded), onions, garlic, ginger together.
Add seasalt, sugar and lime juice.
ii. Chicken Gravy
Saute shallots and garlic in a small pot.
Mix oyster sauce, arrowroot powder, seasalt, sugar (a pinch) with water.
Pour mixture into the pot.
Bring to boil.
Dinner was yummy delicious. Pour the gravy over the chicken. The rice was so tasty, we could just eat it on its own. Justine commented the rice alone was "full of flavour." It really was. :D
I had a shake of The Green Drink in the morning,
nasi lemak for lunch and chicken rice for dinner.
