Day 61 ... Assam Prawns with Petai

ASSAM PRAWNS WITH PETAI

I was in the middle of writing an article.

A beautiful excuse.

So, Bryan cooked dinner tonight. He loves cooking for the family, by the way. We never have to fight over the spatula or frying pan. He was in the kitchen and I ah, supervised from my lap top.

De-vein the prawns ... stir fry the petai first ... assam is in the fridge ...


1. Stir-fry the petai with some oil until crispy-like.
Remove from the pan.

2. Saute garlic till fragrant.
Add the tamarind paste and chilly flakes.
Add water and a pinch of brown sugar.
Add prawns (de-veined).
Stir-fry a bit. Add the petai. 
Done.

3. Garnish with spring onions
and small cherry tomatoes.

The prawns were heavenly, and the petai was crunchy. 
We had it with brown rice. Absolutely delicious.
I ate with my fingers. Hmmm ... Yum!


TEA TIME

This evening, Justine baked a cake. Since there was only one egg left, she checked the internet and got a recipe for "Moist Choc Cake Without Egg."

Half-way preparing, she found out that even flour, sugar and butter were not enough. She was using the left over ingredients from her baking session with Jamie and Jessie on Saturday. So, there was not enough flour, sugar, butter and eggs. Being a public holiday, the mini-store at our condo was closed.

We told her to just put in whatever she had ...


The not-enough ingredients ...


The frosting ... not enough sugar, not enough butter.
Only cocoa powder was sufficient. Used vegetable oil to replace the butter.


The Not-Enough Frosted Moist Choc Cake ...

Healthy cake if You ask me since "ingredients all not enough."
Not enough flour, not enough sugar, not enough eggs, not enough butter.
Turned out PERFECT for some reason. :D
The cake looked so pretty and eye-catching;
tasted just right with all the not-enough ingredients.

I had my morning shake of The Green Drink,
bread with leftover curry, assam prawns with petai for dinner
and Justine's awesome cake for dessert.
