DiSH 188 : HAiNANESE CHiCKEN RiCE

 HAINANESE CHICKEN RICE

Today, we are preparing Hainanese Chicken Rice. 

Bryan's specialty.


We're gonna use the Pressure Cooker. 

This is a simple, no-fuss chicken rice dish.



3 Simple Steps:


1. Blend and Fry Ingredients.


2. Add On.


3. Prepare Sauce.



 Ozonize the chicken.

 This is the carcass for the watercress soup.

 See the disgusting eecky, jelly-like substance that emerge
after detoxifying the chicken?
 Now aren't You glad it ain't gonna be in your tummy?


 Next, ozonize onions, garlic, ginger and chillies.


 1a. Blend Ingredients.
to make the chili sauce and ginger sauce. Blend the ginger separately. Heat some oil in 2 separate pans and sizzle the ingredients respectively adding some seasalt and sugar to seal in the flavours


 1b. Fry Ingredients.
Fry shallots and garlic in sesame seed oil until fragrant. 
Then add half a cube of chicken stock and butter.

 2. Add On.
Add rice grain. Fry till fragrant. 
Add equal amount of water ...

(ie, 1 cup of water to 1 cup of rice.)

 Detoxify the chicken to get rid of the eeeky stuff ...

(The above chicken carcass is for the soup.)



 Add Chicken. Season with a bit of seasalt. 
Place on a rack over the rice. 

Close lid, start flame and wait for the sizzle. 
Then turn flame off and allow 
the pressure cooker to do its magic.

Kindergarten ... :D

3. Prepare Sauce.

Meanwhile, fry onions and garlic in sesame seed oil. 
Add water, oyster sauce, shoyu, brown sugar, sea salt
and strips of chillies. Add corn flour (mixed with water). 
Simmer till sauce thickens.
 The red button of the pressure cooker will indicate 
in about 20 minutes later that the contents are cooked. 
 Wah laaaaa ... Both rice and chicken cooked to Perfection!
Can You smell the that??? Hmmm-mmm ...

 Cut chicken into serving pieces, garnish and drizzle 
some of the sauce over the chicken. Serve immediately!

Here's our dinner guest, Batcy, from Johor Bahru ... 
 We enjoyed our dinner very much. 
The chicken was tender and the rice, super-delicious!

We also prepared watercress soup 
and braised mushrooms with broccoli.
