Day 108 : Crock Pot Curry Chicken With Pasta

CROCK POT CURRY CHICKEN 
with Pasta

This evening, dinner is for Justine and myself. 

Bryan is outstation. I'm just gonna use the crock pot and prepare something easy. I have taken out 2 pieces of chicken thighs to thaw. Found a packet of curry paste in the cabinet. I think I'd just prepare curry chicken. The "cheating" way.

I have good excuse though, apart from an allergic reaction to the screeching and grinding noises of the blender, Bryan is not around to help me with the blending of the curry spices. :D So what's a damsel in distress got to do at a time like this? Why, turn to instant paste, of course! :D There is always a solution in the kitchen. :D

3 simple steps :-

1. Chop the ingredients.
2. Toss in the crock pot.
3. Add curry paste & milk.

Easy peasy. Absolutely! It can't get easier than this, I don't think. There's nothing to it, really. Anyone can prepare this dish. Absolutely kinnnnn-dergarten. :D
 
At 3pm.

1. Chop the Ingredients
chicken, potatoes, carrots

2. Toss in the crock pot.

3. Add curry paste & milk.

I am using half of the packet of curry paste. Pour in the milk till it about covers all the ingredients in the pot. I'm using fat-free fresh milk instead of coconut milk. Found some curry leaves in the fridge and am adding those too. Close the lid. I'm setting the temperature on HIGH. It is 3 pm now. 

I am meeting a friend for tea at 4pm by my poolside cafe. By the time I get back, dinner should be ready. :D

At 5:30pm.

Sorry about the dark photo. Must have forgotten to turn on the flash. The aroma is filling up the kitchen. Time to take in deep, deep breaths. 


Justine exclaims : Hmm-mmm-mmm ...

The contents seem to be done already. The potatoes are soft and the meat looks pretty cooked. I did not need to add salt but I did sprinkle half a teaspoon of brown cane sugar though, for a tinge of sweetness. 

We're gonna have the curry chicken with pasta. For me, it's always easier to prepare pasta than rice. So, I'm gonna boil spaghetti noodles and just before draining, I will blanch some long beans in the same pot. That will take care of the greens for the day.

How easy is this! :D


I had my one shake of The Green Drink this morning, sandwich for lunch and the above for dinner.

To Sum Up
Juice. Fruit. HemoBerry. Water. Coffee.
