DiSH 188 : HAiNANESE CHiCKEN RiCE

 HAINANESE CHICKEN RICE

Today, we are preparing Hainanese Chicken Rice. 

Bryan's specialty.


We're gonna use the Pressure Cooker. 

This is a simple, no-fuss chicken rice dish.



3 Simple Steps:


1. Blend and Fry Ingredients.


2. Add On.


3. Prepare Sauce.



 Ozonize the chicken.

 This is the carcass for the watercress soup.

 See the disgusting eecky, jelly-like substance that emerge
after detoxifying the chicken?
 Now aren't You glad it ain't gonna be in your tummy?


 Next, ozonize onions, garlic, ginger and chillies.


 1a. Blend Ingredients.
to make the chili sauce and ginger sauce. Blend the ginger separately. Heat some oil in 2 separate pans and sizzle the ingredients respectively adding some seasalt and sugar to seal in the flavours


 1b. Fry Ingredients.
Fry shallots and garlic in sesame seed oil until fragrant. 
Then add half a cube of chicken stock and butter.

 2. Add On.
Add rice grain. Fry till fragrant. 
Add equal amount of water ...

(ie, 1 cup of water to 1 cup of rice.)

 Detoxify the chicken to get rid of the eeeky stuff ...

(The above chicken carcass is for the soup.)



 Add Chicken. Season with a bit of seasalt. 
Place on a rack over the rice. 

Close lid, start flame and wait for the sizzle. 
Then turn flame off and allow 
the pressure cooker to do its magic.

Kindergarten ... :D

3. Prepare Sauce.

Meanwhile, fry onions and garlic in sesame seed oil. 
Add water, oyster sauce, shoyu, brown sugar, sea salt
and strips of chillies. Add corn flour (mixed with water). 
Simmer till sauce thickens.
 The red button of the pressure cooker will indicate 
in about 20 minutes later that the contents are cooked. 
 Wah laaaaa ... Both rice and chicken cooked to Perfection!
Can You smell the that??? Hmmm-mmm ...

 Cut chicken into serving pieces, garnish and drizzle 
some of the sauce over the chicken. Serve immediately!

Here's our dinner guest, Batcy, from Johor Bahru ... 
 We enjoyed our dinner very much. 
The chicken was tender and the rice, super-delicious!

We also prepared watercress soup 
and braised mushrooms with broccoli.

DAY 187 : SPAGHETTI CARBONARA

SPAGHETTI CARBONARA


This evening, we are gonna prepare spaghetti carbonara. It may not be the typical carbonara that you find in the restaurants as we do not have some of the ingredients like cream and parmesan cheese, but it will be close, and delicious all the same. :D


3 Simple Steps :


1. Boil Spaghetti.


2. Saute Garlic.


3. Add On.

 Cooked ham, cherry tomatoes, garlic, spaghetti, 
coriander leaves, peppercorn and some aromatic 
dried herbs rosemary, thyme and bay leaf.


 Detoxify the vegetables to remove harmful chemical residues. Meanwhile, prepare the ingredients. 


1. Boil Spaghetti 

in salted water until al dente, drain and set aside.

 2. Saute garlic in olive oil.

 3. Add On.

Add chopped ham.

 Add the herbs. Fry Fry Fry.

 Add the spaghetti. Add cream cheese. Add coriander leaves (chopped). Add seasalt. Add pepper.

Toss and mix well. 
Add one beaten egg. Toss quickly.

We have cream cheese left over from Justine's cheese cake session. 
We're gonna use this instead of cream.

 Ta -- dahh!!! Serve immediately.

 BoN aPPeTiTe!!!

Spaghetti Carbonara with a simple salad on the side,
lightly drizzled with flaxseed oil and juice of lemon
with a generous sprinkling of sunflower seeds on top.

Tasty with the aromatic herbs and absolutely yummy! :D 

Slurrrrrrpppp!

I had my one shake of The Green Drink in the morning, 
char kuey teow for lunch and spaghetti for dinner. :D

DAY 186 : STEAMED GAROUPA FISH STEAK


 STEAMED GAROUPA STEAK




This evening, we are gonna prepare a light dinner. A single dish. We are still quite full from having a late lunch. Moreover, we still have some leftovers of chicken curry and the watercrest soup from the day before. The soup would be amazing today. :D


This is a very simple steamed fish dish. 

Absolutely kindergarten. :D
  


3 Simple Steps:


1. Prepare Fish.


2. Steam Fish.


3. Fry Shallots.


 Ozonize the fish first to remove bacteria, chemicals 
and the fishy odour.

1. Prepare the fish for steaming.

Ingredients
shitake mushrooms, cheery tomatoes, 
carrot strips, ginger strips.


Seasoning  
light shoyu, oyster sauce, fish sauce, 
sesame seed oil, black pepper.

 2. Steam for 20 minutes. 


3. Fry shallots.

When ready, garnish with fried shallots, spring onions 
and a slice of lemon.

 The fish is really fresh and yummy! 
Dinner is simply delicious!

 This morning, I had my one shake The Green Drink
noodles for lunch, sandwiches for tea and the above for dinner.

DAY 185 : CURRY CHICKEN

 CURRY CHICKEN
 with watercrest soup


This evening, Bryan is cooking curry chicken for dinner. Yayyy ... our favourite. He's also preparing watercrest soup. Slurp ... :D

Ozonize the chicken first to remove harmful chemicals, hormone injections and bacteria. Remove the white substance which You see floating on the water. Shocking, huh? You are now eliminating TOXiNS from your chicken. :D

 Ingredients : Garlic, shallots, curry leaves, lemon grass, 
star anise, cardamons, cloves, cinnamon, jintan manis, 
jintan putih and curry powder.


1. Blend only garlic and shallots.


2. Fry Spices. 

Then fry shallots. Toss in curry leaves.

Smell that? Hmmmm ...

3. Add On.

Add blended garlic and shallots.

 Add curry powder and fry fry fry ...
Add chicken. Add lemon grass (bruised). 
Add curry leaves. Add seasalt. Add a little water.

 Add potatoes.

 Add half a carton of fresh milk.
 Bring to boil and simmer on low heat 
until the contents are cooked.

Normally, we would use the Pressure Cooker to prepare the curry chicken.
Today however, we are using our Pressure Cookers for the rice and soup.
 Ta -- DaHHHH!

 Ozone the vegetables to remove pesticides and harmful residues.

That's the dried sweet plum Bryan normally uses for soup.


Boil Ingredients in filtered water
in Pressure Cooker:

chicken carcass, watercrest, dried sweet plums, goji seeds, 
red dates, seasalt, a dash of shoyu and sesame seed oil.

 The soup is simply amazing! :D

 The yogurt curry is delicious. The chicken is tender and 
the potatoes are just yummy! :D Finger lickin' good!

This morning, I had my one shake of The Green Drink
roti canai and kaya butter toasts for lunch, 
loh mee for tea time, and the above for dinner. :D

DAY 184 : CHILLY CHICKEN

 CHiLLY CHiCKeN
with brown rice and daikon soup


This evening, we are going to prepare a simple spicy chicken dish and daikon soup. No curry powder or chilly powder is required for the chicken dish. :D It's absolutely kindergarten. Anybody can do this. :D


3 Simple Steps :


1. Blend Ingredients.


2. Fry Ingredients.


3. Add Chicken.


 Ozonize the chicken to eliminate germs, bacteria, 
hormone injections and antibiotics.

This is my first time ozonizing meat.  To be honest,
I am really shocked to see a layer of eecky, 
whitish substance floating on the water.   

 Bryan picks it up with a pair of chopsticks.

 It feels rubbery ...

 Ingredients : tomatoes, dried chillies, large onions, 
garlic, shallots, fresh chillies and ginger.

 Ozonize the vegetables.

 Say goodbye to pesticides and bacteria. :D

 Is it our imagination but do the chicken and vegetables 
look fresher? The meat surprisingly smells fresh too. :D

 1. Blend the ingredients with a little water.

 2. Fry Ingredients.

Heat oil in pot.

 Toss in the curry leaves, bird's eye chilly 
and lemon grass (bruised) to bring up the aroma.

Fry the blended ingredients 
until the oil appears on the surface.


3. Add Chicken.

Add seasalt. Add shoyu. Add brown sugar.
Close lid and simmer until the meat is cooked.
About 20 minutes or so.

When the chicken is ready, stir in a small tub of yogurt
(with the fire on).

 Garnish with whatever You have in the fridge. :D

 DAIKON SOUP


Fill the Pressure Cooker with filtered water. 
Add daikon, carrots, garlic, onion, dried cuttle fish, 
sweet plums, red goji seeds, red dates, 
seasalt, half a cube of chicken stock (no MSG) 
and sesame seed oil.

 Ooooohhh ... the soup is extraordinarily tasty and so very sweet.

 Condiment : diced onions and yogurt 
with a shake of black pepper and a sprig of coriander leaves.


 Hmmm-mmm-mmm ... 
We are so enjoying our dinner very much! :D
Totally awesome ... AWESOME ... awesome ...

This morning, I had my one shake of The Green Drink
keow teow noodles for brunch, flour noodles for lunch 
and the above for dinner. :D
