Day 111 : Yee Mee Noodles with Mussels

YEE MEE NOODLES WITH MUSSELS

Today, we had roti canai during tea time. 

We are still quite full. So, Bryan is boiling some soup for a light noodle-dinner. The soup base is extremely easy to prepare. Just toss all the ingredients into the pressure cooker, and You'll have a nice soup base in just 30 minutes! Or less. Hear Ye, Hear Ye. :D


 3 Simple Steps:

1. Boil the Soup

2. Boil the Noodles

3. Garnish & Serve


1. Boil the Soup
Fill the pot with filtered water. 
Add chicken carcass, old cucumber, carrots, 
frozen mussels, anchovies (those tiny ones), onions, garlic, 
goji seeds, seasalt, black pepper and sesame seed oil.  

Close lid. Turn on flame.
Wait till it hisses, then turn off flame.
Let the magic begin.


2. Boil the Noodles
When the soup is ready, O--M--G ... You WILL SO know when it is ready, the aroma is just spell-binding! Anyway, the pressure cooker button will tell You when it's ready. Scoop some out into a smaller pot, and boil a portion of noodles in it.


3. Garnish & Serve
with red chillies and green spring onions.
The soup is out of this world! 
It's absolutely tasty and wholesome 
as all the ingredients are natural. 
No artificial stock.

Even the mussels contributed its unique flavor into the soup.

After our noodles, we are having a bowl of soup each. 
We couldn't get enough of the soup. 
It's so darn tasty like You wouldn't believe. :D


Today, I didn't take The Green Drink. :( 
I didn't take my juice. :(
I didn't take any fruit. :(

I had McDonald's Cheese Burger for lunch 
and tosay for tea. 
Bad ... bad, I know. I definitely caved-in today.

Day 110 : Nasi Kerabu & Ayam Goreng Berempah

(Take-Away Dinner)

This evening, Bryan brought home 3 packets of nasi kerabu. 

He had met a friend who runs a restaurant selling Kelantanese food (and other Malay delicacies) and decided to bring some of the mouth-watering goodies home. :D


Nasi Kerabu literally means assorted vegetable rice or salad rice. Got that definition from the net. There is the blue rice, a generous helping of solok lada (fish flakes with toasted grated coconut and chillies), vegetables (raw), fish crackers and  fried spiced chicken drumstick.



You just gotta eat with your fingers ... 
to really appreciate this meal. :D

Day 109 : OVEN-BAKED QUICHE

OVEN-BAKED QUICHE

This evening, I am going to make a simple Quiche. According to Wikipedia, a Quiche is basically an oven-baked dish, that is based on a custard made of eggs and milk (or cream) in a pastry crust. I'm gonna do this one without the pastry.

I am rummaging through the fridge and taking out whatever that I can find in the fridge. The Quiche can have any kind of fillings that is suitable for oven-baking, so just take out whatever You have that is ideal for the oven. This is a really, really, really easy dish to make.

3 simple steps :

1. Lay the base.
2. Build it up.
3. Seal it in.

1. Lay the base.
Oil the oven dish, from the base up to the sides,
with some olive oil or butter to ease washing up later.
 Slice the potatoes lengthwise. Lay them.

2. Build it up.

Scatter carrots (slices), tomatoes (slices), tuna (flakes), 
organic hulled millet (for a more filling dish), 
wakame seaweed, shallots and green olives.

3. Seal it in.
In a bowl, beat 3 eggs and add a coffee-mug of fresh milk. 
Add a pinch of seasalt into the mixture.
Pour the egg-milk mixture over the ingredients.
Shake some black pepper over it. 
Cover with aluminium foil.

Pop it into the oven at 180 degrees celcius 
for about 30 minutes.

I am using my mini-oven so I do not need to pre-heat it.
30 minutes later ...
Garnish with fresh carrots, cherry tomatoes and lime slices.
Squeeze lime juice over the quiche for a tangy taste.

Justine is having hers with cheese. 
The Quiche is hot from the oven 
and the cheese melts easily into it.

I am having mine with some ketchup!

We cut the Quiche up in into 4 squares. Justine had 2 slices, I had one. There was one slice left for Bryan when he arrived home at 10:30 pm. A simple French cuisine in your home! :D

I had my one shake of The Green Drink in the morning, 
sandwiches for lunch, instant noodles for tea (yikes!), 
snacked on nuts and Quiche for dinner.

Day 108 : Crock Pot Curry Chicken With Pasta

CROCK POT CURRY CHICKEN 
with Pasta

This evening, dinner is for Justine and myself. 

Bryan is outstation. I'm just gonna use the crock pot and prepare something easy. I have taken out 2 pieces of chicken thighs to thaw. Found a packet of curry paste in the cabinet. I think I'd just prepare curry chicken. The "cheating" way.

I have good excuse though, apart from an allergic reaction to the screeching and grinding noises of the blender, Bryan is not around to help me with the blending of the curry spices. :D So what's a damsel in distress got to do at a time like this? Why, turn to instant paste, of course! :D There is always a solution in the kitchen. :D

3 simple steps :-

1. Chop the ingredients.
2. Toss in the crock pot.
3. Add curry paste & milk.

Easy peasy. Absolutely! It can't get easier than this, I don't think. There's nothing to it, really. Anyone can prepare this dish. Absolutely kinnnnn-dergarten. :D
 
At 3pm.

1. Chop the Ingredients
chicken, potatoes, carrots

2. Toss in the crock pot.

3. Add curry paste & milk.

I am using half of the packet of curry paste. Pour in the milk till it about covers all the ingredients in the pot. I'm using fat-free fresh milk instead of coconut milk. Found some curry leaves in the fridge and am adding those too. Close the lid. I'm setting the temperature on HIGH. It is 3 pm now. 

I am meeting a friend for tea at 4pm by my poolside cafe. By the time I get back, dinner should be ready. :D

At 5:30pm.

Sorry about the dark photo. Must have forgotten to turn on the flash. The aroma is filling up the kitchen. Time to take in deep, deep breaths. 


Justine exclaims : Hmm-mmm-mmm ...

The contents seem to be done already. The potatoes are soft and the meat looks pretty cooked. I did not need to add salt but I did sprinkle half a teaspoon of brown cane sugar though, for a tinge of sweetness. 

We're gonna have the curry chicken with pasta. For me, it's always easier to prepare pasta than rice. So, I'm gonna boil spaghetti noodles and just before draining, I will blanch some long beans in the same pot. That will take care of the greens for the day.
Ta-dahhh!
How easy is this! :D

Day 107 : Chicken Burger

CHICKEN BURGER

My plan to make homemade burger pates today is foiled. Don't even get me started on the whys. Let's just say, we'll postpone that till next week. Meanwhile, because my mind is so set on having BURGERS tonight, I had to buy some frozen chicken pates from our grocery shop, just to satisfy a craving.  

3 simple steps :-

1. Fry burger pates.
2. Fry onions.
3. Pile Up!

1. Fry the Pates.
No oil is required. No thawing either.
Place the pates on the hot pan.
1 minute later, use a potato masher to sear them.
5 minutes later - flip over. Do the same thing.
Bryan used to work in McDonald's in London,
so the timing is quite accurate. :D
2. Fry Onions
3. Pile Up!

Day 106 : HERBAL CHICKEN PAN MEE

Today, Bryan is down south. I had some tea stuffs in the afternoon which included fried mee hoon, noynya kueh, fried spring rolls and curry puffs at my company's tea gathering. 

I was way too tired to cook tonight. So Justine and I went to JoJo, our favourite pan mee coffee shop. This time, I tried their Herbal Chicken menu, instead of my usual Lat Jiu (chilly hot). 

In fact, when the waitress came to our table, she said instantly, "Two Lat Jiu?" 

Haha.

The noodles are simply out of this world! Justine had their knife cut noodles. We wallop the chilly like there is no tomorrow. :D

Day 105 : Assam Fish Red Snapper

ASSAM FISH RED SNAPPER

This evening, we are preparing assam fish. 

Before I go on, let me just say that, I know what You're thinking and You're right. Something's missing from the picture. I can hear You. Should have some green somewhere. You're so right. I think so too. Imagine a sprig of coriander leaves in the middle. We ran out of that. :( However, not to worry because IMAGINATION is plentiful - we can never run out of that! :D

Okay, assam fish. Quite a simple straightforward dish to prepare.

In 3 easy steps :

1. Chop the Ingredients
2. Fry the Ingredients
3. Simmer the Ingredients

Think You can do that? 
Sure You can. Try it. :D

 1. Chop the Ingredients
tofu puffs, curry leaves, ladies fingers, 
chilles big and small, 
bunga kantan (red petals only), 
lemon grass (smashed in whole), 
ginger, shallots, tomatoes and lime. 

Normally, Bryan would blend all these ingredients. 
Today, he wants to try without using the blender.

 2. Fry the Ingredients
Saute shallots, ginger and bunga kantan 
in cooking oil until fragrant.
The aroma at this point is amazingly fragrant!
 Toss in the stalks of lemon grass.
Add assam fish paste of a reputable brand.
Didn't I tell You this would be an easy dish to do?
You don't need to use tamarind juice with the paste.
3. Simmer the Ingredients
Add filtered water. Bring to boil.
Add the fish in first. Add seasalt. Add lime juice.
Close lid and simmer for about 10 minutes.
Open lid, add the rest of the vegetables.

Add a cup of fresh milk 
(in place of coconut milk) for a creamer texture.
Close lid again and simmer for 
another 5 minutes or so.
 TA-DAHHH!!!

For photography purposes, the photo is taken with only half of the contents in the pot, transferred to the serving dish, so the fish remains visible. :D
This is my plate BEFORE the banjir (flood).

We are having white rice today. That dark portion in the middle is the garlic-chilly-dark shoyu condiment. The fish is really excellent. Red snapper is quite suitable for curry dish, I must say. Even Bryan thinks so. The fish doesn't easily break or fall apart. It's still whole after all the simmering. A survivor alright. :D

We enjoyed dinner very much. You can't go wrong eating with fingers. We do agree though that, blending the ingredients are better for a smoother texture.We learn something new every day. :D

Day 104 : Braised Red Snapper With Bitter Gourd

BRAISED RED SNAPPER 
WITH BITTER GOURD

Today, Bryan is preparing braised fish with bitter gourd. 

I am asking him to do a curry fish dish but he says he wants to "finish up the bitter gourd that's left in the fridge otherwise it's gonna go bad." 

Yeah, he hates it when that happens. He's also boiling lotus soup in the pressure cooker. At the same time, boiling white rice in a second pressure cooker. 

Yes, we have 2 magic cookers. Bryan's mother gave us hers some time ago. It is amazing how easy it is to prepare lotus soup with the pressure cooker. You literally just toss everything in and let the pot transform the ingredients. :D

3 simple steps :

1. Boil the Soup
2. Fry the Fish
3. Braise the Bitter Gourd & Fish

1. Boil the Soup
Here's our pressure cooker. 
Fill half the pot with filtered water.
Toss in dried octopus, chicken carcass 
lotus (sliced), goji seeds and seasalt.
Close lid. Turn on flame.
The soup is ready within 20 -30 minutes.
Garnish with chopped spring onions.
Justine remarks, Hey, traffic lights! :D
The soup is very tasty and absolutely divine.

The Braised Fish Ingredients
 red snapper, bitter gourd (pre-soaked in water), 
ginger, shallots and spring onions.
2. Fry the Fish
Season the fish with seasalt, black pepper 
and arrowroot powder before frying. 
We only need to fry the fish lightly
since we are going to braise it in a bit.

Remember the 3 guide rules for frying a fish, 
without having to battle with the splattering oil : 
Hot Pan, Hot Oil and Dry Fish. :D 
The Sauce
In a small bowl, mix some organic taucu miso 
and arrowroot powder with water.
We are about to prepare the bitter gourd.
3. Braise the Bitter Gourd & Fish
Stir-fry the bitter gourd with shallots and garlic 
in sesame seed oil. Add the Fish in.
Pour in the sauce mixture. 
Close lid and allow to simmer.
When ready, garnish with spring onions.
Enjoy the meal!

I'm sorry to say that my camera battery went off, and I wasn't able to snap further photos after the one on the top page. Dinner was awesome. The fish was crispy and sweet, the bitter gourd was not at all bitter. Not even a hint or an edge of bitterness. 

Bryan thinks it's because he soaked them before frying. I think it's because of the braising. The gravy with the chilly condiment was delicious! Don't even get me started on the lotus soup ... Simply tantalising, to say the least!



I had 2 shakes of The Green Drink today. 
No lunch. Only dinner.
